Three years ago, after weeks of unending chronic head pain, I went to see a neurologist (who happened to specialize in celiac disease) to hopefully find some relief. What came out of that first appointment and the many to follow was not what I expected but ended up being a game changer in my quality of life and my relationship with food. All of my symptoms and nerve damage pointed in one direction and after lots of testing I was diagnosed with severe gluten intolerance. This turned into a lifestyle change for not only me but my husband and kids as well, as we became a completely gluten free home. After losing my grandpa and my dad to cancer when they were young, I had a passion for healthy living, but because food often made me feel sick, my view on how to use food for health was mixed up. This journey has redefined my passion for healthy living by using food for fuel and for healing.
Because I have lost two people in my life to cancer and seen others diagnosed with it, I realized that there are bigger health issues out there then gluten intolerance (however hard the symptoms may be). I also realized that all of our bodies will eventually waste away and some sooner than others.
However it is also these very reasons that encourage me to press on even with its challenges. If I can have a better quality of life to raise my kids and point them to Jesus, and if I can feel better to be a part of showing God’s love to my community; then it's worth it to me to take care of the body God’s given me by healing it from the inside out.
I love finding fun ways of having my kids get their hands into the cooking process with me. We like to come up with recipes that everyone can help with and everyone likes to eat and we would love to share some of those with you!
